I had such a nice relaxing weekend! I headed down to Newport Beach with my sis in law, Laura, and we just ate and layed out! My kinda break! Danny and Steph came down to hang out with us Saturday too. We had a great time.

This is what I got printed out for Mikey for Father's Day

I just need to frame it so he can put it in his office. I've never used a template or clipped pictures so it took me awhile to figure it out. There is no question that Mikey is the best DAD in the world, words cannot express my gratefulness. I love you and it is obvious that Jocelyn does too :-) Jocelyn was in nursery yesterday and had to go potty so the lady asked her if she wanted her to get her mommy and Jocelyn replied, "No, I want my Daddy." Yep, pretty much sums it up.

The stupid food fest!


Awe man. What a bummer. I was SOOOO excited for the All American Food and Music Fest hosted by Bobby Flay. We got there about an hour and a half after it started and moseyed around to find what we wanted to eat. My sister, her boyfriend, Mikey and I all wanted to get in different lines so we could all get a different plate of food and share (you got one free meal from a purveyor with your ticket). So we all got into our different lines and waited and waited and waited...after an hour and a half of waiting in lines and NOT MOVING, we decided it just wasn't worth it. They WAY over sold the thing. The only stand getting their food out and without much wait was "America's best peanut butter and Jelly Sandwiches," so we went and got those while Mikey went and asked how to get a refund. So after we got our refunds, we left. So disappointing but because of the complete disappointment, it actually was pretty funny. We went to a food fest and got peanut butter sandwiches...

Trying out Manuel Settings.





So I don't ever use Manuel settings on my camera...ever. Just pure laziness on my part. I thought I'd give it a try today. I also love back lighting so I thought I'd try it with that too. If any of you know anything about photography PLEASE give me some tips. My camera had a really hard time focusing when I really tried to get the sun rays. Oh well. Practice makes perfect...when and if I do :-)

Egg muffins...my way.

What you'll need: Egg beaters (or one egg), Pam, a round/flat bottomed Tupperware or bowl, salt/pepper, cheese, English muffin/croissant, Canadian bacon, zucchini.

Chop the veggies. Use whatever kind you want! Saute...to make it lower in fat I just use a couple tablespoons of water and Pam...just enough to soften them.

Then spray the Tupperware with Pam. It makes it easier for the egg to come out.

Pour about 1/4-1/3 cup egg beaters in the Tupperware, or just use one egg(whisked).

Add the sauteed veggies, salt and pepper and put in the microwave for 1min 30sec. Check to see if it's cooked through. If not put it in for another 10-15 sec.

I like to brown the Canadian bacon in the pan, you can use the microwave if you want.


Cut the cheese--haha. Ok I don't have a cheese cutter so mine are really sloppy. Also, my husband prefers American cheese which works great too.

Put the ham on the cheese, you can use just one slice of course.
Add the egg and wahla! Your very own Egg Muffin...gourmet style.

This is such an easy and healthy meal. I love it! There's so many variations you can do too. Sometimes I use a bigger Tupperware and make it on croissants. Sometimes I don't use veggies and sometimes I use lots...onions, peppers, zucchini...whatever. You'll love it. Jocelyn can almost eat a whole one! Quick, easy and yummy!

Utah was so much fun! A special thanks to Juliet, my sister, who is always a gracious host and my younger sister Jacquie for watching Jocelyn while we went to the wedding. I got to see so many friends and family and eat so much good food!!! Krissy's wedding was beautiful. It was so fun to see her all dressed up and so happy!
